Not because I was hungry. But because it was just\u2026 <em>so<\/em> good. And then I stood there with the package in my hand and thought: wait a minute. What&#039;s in this?<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">That&#039;s Carla&#039;s <strong>Cranberry Super Bread<\/strong>. And if you haven&#039;t tried it \u2014 read on, because this post is for you.<\/p>\n<p><\/p>\n<p><\/p>\n<h2 class=\"wp-block-heading\">Bread has a history<\/h2>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Before we dive into this particular bread, I want to say something about bread in general.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Bread is humanity&#039;s oldest food. We&#039;ve been baking since the Stone Age \u2014 and what we&#039;ve done is actually pretty amazing: taking a simple seed, crushing it, mixing it with water and heat, and creating something that keeps us alive and brings us together around the table.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">But somewhere along the way \u2014 with industrialization, with price pressure, with \u201clonger shelf life at the lowest cost\u201d \u2014 we lost what actually fills us up. The fluffy white bread that seems healthy because it\u2019s \u201clight\u201d? It\u2019s sugar with a gluten structure. It doesn\u2019t fill us up, it spikes blood sugar, and two hours later you\u2019re hungry again.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">It&#039;s not the bread that&#039;s the problem. It&#039;s <em>what we did with the bread<\/em> which is the problem.<\/p>\n<p><\/p>\n<p><\/p>\n<h2 class=\"wp-block-heading\">And then there&#039;s this <img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/17.0.2\/svg\/1f49a.svg\" alt=\"\ud83d\udc9a\" \/><\/h2>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">da Carla Cranberry Super Bread is one of those breads that actually does what it promises. I&#039;m pretty skeptical of food claims in general \u2014 &quot;healthy&quot; is a word that&#039;s used for everything \u2014 but when I read the ingredients list, I understood why I can&#039;t stop eating it.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>It contains:<\/strong><\/p>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\"><\/ul>\n<\/li>\n<\/ul>\n<p>\u00a0<\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Gluten-free oat flakes<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Sunflower seeds<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Cranberries (8 %) \u2014 where the slight tartness comes from<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Flaxseed \u2014 brown and golden brown, both varieties<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Millet seeds<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Psyllium fiber \u2014 what gives it that wonderful chewy, creamy texture<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Rapeseed oil<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Vinegar<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<ul class=\"wp-block-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li>Salt<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">And that&#039;s it. At first I thought it was a bit of a cheat meal \u2014 <em>\u201cI shouldn&#039;t think it&#039;s so good if it&#039;s useful\u201d<\/em> \u2014 but no. There is science behind the craving.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>Sour + salty<\/strong> is a combination that activates the taste receptors in a way that makes the brain say <em>more, thank you<\/em>. The cranberry and salt work together just like that.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>Psyllium fiber<\/strong> creates a texture reminiscent of the chewiness we instinctively associate with \u201creal food\u201d \u2014 not airy and light but <em>with substance<\/em>.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>The fat from flaxseed and rapeseed oil<\/strong> carries the flavor. Fat is the flavor carrier. That&#039;s why low-fat products always taste a little bland \u2014 they take away what makes the food delicious.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>The oats<\/strong> contributes a natural, mild sweetness. No added sugar, but still sweet. It&#039;s the oats&#039; own sugar, released by processing heat.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">So: you don&#039;t react to weird things. You react to real, well-balanced food that&#039;s made to taste good. <em>and<\/em> do good. It&#039;s actually quite beautiful.<\/p>\n<p><\/p>\n<p><\/p>\n<h2 class=\"wp-block-heading\">But is it perfect? Honest answer <img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/17.0.2\/svg\/1f50d.svg\" alt=\"\ud83d\udd0d\" \/><\/h2>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">I like to be honest with you \u2014 as a good friend, not as an advertising agency.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>There are a couple of things to know:<\/strong><\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">It is <strong>made in Poland<\/strong>, even though the brand da Carla is Swedish. That&#039;s not a problem in itself, but it adds transportation miles and it&#039;s not a locally produced choice.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>Rapeseed oil<\/strong> is industrially pressed. Okay, but not the finest oil. If you had the choice, you might have chosen a cold-pressed oil instead \u2014 but it&#039;s a commercial bread and the compromise is reasonable.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>The vinegar<\/strong> can irritate a sensitive gut in some people. If you notice that you feel a little strange \u2014 it&#039;s probably it.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><strong>The plastic<\/strong> is plastic. Not ideal for the environment. Recycled if you sort correctly.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">And \u2014 it&#039;s not raw. It&#039;s a baked bread. The enzymes and live nutrients aren&#039;t retained in the same way as in a smoothie or a salad. But it&#039;s one of the best baked alternatives I&#039;ve found.<\/p>\n<p><\/p>\n<p><\/p>\n<h2 class=\"wp-block-heading\">The environment and the world around you <img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/17.0.2\/svg\/1f30d.svg\" alt=\"\ud83c\udf0d\" \/><\/h2>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Vegan = much lower climate footprint than animal products. <img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/17.0.2\/svg\/2705.svg\" alt=\"\u2705\" \/><br \/>Flaxseed and oats = relatively sustainable crops. <img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/17.0.2\/svg\/2705.svg\" alt=\"\u2705\" \/><br \/>Made in Poland and shipped here. <img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/17.0.2\/svg\/274c.svg\" alt=\"\u274c\" \/><br \/>Plastic packaging. <img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/17.0.2\/svg\/274c.svg\" alt=\"\u274c\" \/><\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Bottom line: it&#039;s a pretty good choice \u2014 better than most breads on the bread shelf.<\/p>\n<p><\/p>\n<p><\/p>\n<h2 class=\"wp-block-heading\">Now the fun part: toppings!<\/h2>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Five slices. That&#039;s what a package contains. Five opportunities to make something beautiful and delicious. Here are my favorites right now \u2014 all in the Amaelle spirit, meaning pure flavors, color on the plate, and nutrition that actually makes a difference.<\/p>\n<p><\/p>\n<p><\/p>\n<h3 class=\"wp-block-heading\">The purple dream<\/h3>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><em>Cranberry bread + cashew cream + blueberries + lavender honey syrup + a sprig of fresh thyme<\/em><\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Cashews soaked overnight and mixed with lemon and salt make a wonderfully smooth, white cream. The blueberries sing against the cranberry bread \u2014 purple on purple \u2014 and the thyme lifts it all into something that almost feels French. Breakfast on a sunny day.<\/p>\n<p><\/p>\n<p><\/p>\n<h3 class=\"wp-block-heading\">The green calm<\/h3>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><em>Cranberry bread + avocado + flaked salt + lemon zest + chili flakes + pumpkin seeds<\/em><\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The classic, but done right. Avocado mashed coarsely, not smooth. Lemon zest (not juice!) adds a fresh floral note. Chili flakes for heat. The pumpkin seeds crunch nicely against the chewy bread. Eat it slowly. It deserves it.<\/p>\n<p><\/p>\n<p><\/p>\n<h3 class=\"wp-block-heading\">The pink power sandwich<\/h3>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><em>Cranberry bread + hummus + grated beets + sunflower seeds + dill<\/em><\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Hummus as a base \u2014 homemade if you have time, otherwise a good store-bought one. Grated beets on top in a small mountain. Sunflower seeds for crunch. Dill for the Nordic feel. Looks like art. It&#039;s also rich in iron, protein and fills you up for four hours.<\/p>\n<p><\/p>\n<p><\/p>\n<h3 class=\"wp-block-heading\">The yellow sunny<\/h3>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><em>Cranberry bread + almond milk pulp + turmeric + mango + coconut flakes<\/em><\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">Yes, it sounds unexpected. But try it. Almond pulp flavored with turmeric and a little honey as a base. Diced mango. Coconut flakes. It&#039;s breakfast and dessert all at once, and it&#039;s incredibly beautiful to look at.<\/p>\n<p><\/p>\n<p><\/p>\n<h3 class=\"wp-block-heading\">The neighbor with garden herbs<\/h3>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\"><em>Cranberry bread + olive oil + ricotta (or goat cheese) + basil + cherry tomatoes + black pepper<\/em><\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">The simple Italian. Drizzle oil on the bread, add cream cheese, halved sun-warmed tomatoes, basil grated by hand (never cut basil, it oxidizes). Coarsely ground black pepper. Eat outside in the sun if possible.<\/p>\n<p><\/p>\n<p><\/p>\n<h2 class=\"wp-block-heading\">One last thought<\/h2>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">It might seem strange to write an entire post about bread. But it&#039;s not really just about the bread.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">It&#039;s about listening to your body when it tells you. <em>I like this.<\/em> \u2014 and instead of being ashamed or doubting, actually explore <em>why<\/em>. It&#039;s about the fact that food can be both tasty and wholesome, that healthy doesn&#039;t have to taste like something you have to put up with, and that the beautiful and the healthy can be the same thing.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">That&#039;s what Wonderful Wednesday is all about, for me.<\/p>\n<p><\/p>\n<p><\/p>\n<p class=\"wp-block-paragraph\">What do you eat on your bread?
