Friday recipe: Warm salad with sweet potato, avocado & lemon

A dish that is filling yet light. Perfect for Friday night.

Ingredients (2 servings)

– 1 large sweet potato  

– 1 avocado  

– 1 handful of arugula or spinach  

– ½ cucumber  

–Olive  

– 1 tbsp olive oil  

– Juice from ½ lemon  

– Salt, pepper  

Do this:

1. Set the oven to 200°C  

2. Cut sweet potatoes into pieces, drizzle with olive oil + salt  

3. Roast in the oven for about 25 minutes  

4. Add lettuce, sliced avocado and cucumber  

5. Add the warm sweet potato  

6. Squeeze lemon over and top with olives
